Abstract: Influences on American cooking from Europe and Africa have been predominately located in the South. Specialized and elaborate cooking and meals is giving way to a revival of plain cooking with homemade and homegrown foods. Southern cooking, whether plain or elaborate, may be the last surviving regional mode of cooking left in America. The new Southern-style cuisine presented takes advantage of new ingredients, methods, appliances, and tools and is eclectic, literate, and homemade. Good cooking is seen as fine art. All recipes are original.
